15 Minute Peach and Prosciutto Flatbread

This refreshing and crisp flatbread is perfect for entertaining in a hurry and makes the most out of the flavor of the sweet peach.


Ingredients

  • 2 Store bought flatbreads (mine are from @traderjoes

  • 8 ounces of mozzarella cheese (sliced)

  • 2 Diamond Princess Peaches (segmented) 

  • 4 ounces ( or a big handful) of arugula 

  • 2 ounces of basil 

  • 2 tablespoons of olive oil

  • 1 tablespoon of balsamic vinegar 

  • 1 tablespoon of balsamic vinegar glaze (mine is from @traderjoes

  • 1 ounces of Pecorino Romano 

  • Salt and pepper 


Directions


1. Preheat oven or grill to 425 degrees Fahrenheit 

2. Brush flatbread with 1 tablespoon of olive oil. Then crack fresh pepper and salt over the flatbread.

3. Place 2 ounces of mozzarella and 1/2 of the basil on each flatbread.

4. Put flatbreads directly on the oven rack (middle) or on the grill for 5-7 minutes or until the cheese has melted and the crust has crisped up.

5. In a bowl, mix together arugula, rest of the olive oil, balsamic vinegar, Pecorino Romano, and salt and pepper (to taste).

6. When the flatbread comes out of the oven or off the grill, spread half of the arugula mixture on each flatbread. 

7. Place peach segments and prosciutto and finish by drizzling the balsamic vinegar glaze diagonally in both directions.
