According to my husband this is the best chicken I have ever made, and I agree!
Ingredients:
4 bone in skin on chicken thighs
1 Apple
1 1/2 cups of apple cider
1/2 cup chicken stock
2 pats of butter
1 tablespoon of Dijon mustard
1 tablespoon of whole grain mustard
1 tablespoon apple cider vinegar
1/4 an onion soup packet
1 tablespoon herbs de Provence
Salt and pepper
A splash of olive oil for sautéing
Directions:
Pre heat oven to 400 degrees Fahrenheit. Salt and pepper both sides of chicken thighs. Add to a large skillet with a drizzle of olive oil -on medium high heat with skin side down first. Cook for about 6 minutes until the skin is golden brown. Flip the chicken and cook for 6 minutes on the other side.
In a bowl, whisk together 1 cup of apple cider, both mustards, chicken stock, apple cider, and onion soup mix. Pour into skillet. Add sliced apples to skillet. Put into oven for about 15- 20 minutes until the chicken reaches a temperature of 155 degrees Fahrenheit (it will rest up to 160 once removed from oven).
Remove skillet and put chicken on a plate. Turn heat on medium and add butter and rest of apple cider into the skillet. Whisk to combine. Add chicken back in and with a spoon, glaze the top of the chicken by adding spoon fulls of the liquid on top of the skin. Enjoy!
