Apple Cider Glazed Chicken

According to my husband this is the best chicken I have ever made, and I agree!


Ingredients:

  • 4 bone in skin on chicken thighs

  • 1 Apple

  • 1 1/2 cups of apple cider

  • 1/2 cup chicken stock

  • 2 pats of butter

  • 1 tablespoon of Dijon mustard

  • 1 tablespoon of whole grain mustard

  • 1 tablespoon apple cider vinegar

  • 1/4 an onion soup packet

  • 1 tablespoon herbs de Provence

  • Salt and pepper

  • A splash of olive oil for sautéing


Directions:

  1. Pre heat oven to 400 degrees Fahrenheit. Salt and pepper both sides of chicken thighs. Add to a large skillet with a drizzle of olive oil -on medium high heat with skin side down first. Cook for about 6 minutes until the skin is golden brown. Flip the chicken and cook for 6 minutes on the other side.

  2. In a bowl, whisk together 1 cup of apple cider, both mustards, chicken stock, apple cider, and onion soup mix. Pour into skillet. Add sliced apples to skillet. Put into oven for about 15- 20 minutes until the chicken reaches a temperature of 155 degrees Fahrenheit (it will rest up to 160 once removed from oven).

  3. Remove skillet and put chicken on a plate. Turn heat on medium and add butter and rest of apple cider into the skillet. Whisk to combine. Add chicken back in and with a spoon, glaze the top of the chicken by adding spoon fulls of the liquid on top of the skin. Enjoy!
