Caramel Apple Beignets

This will bring you straight to Cafe Orleans for the sweetest most satisfying treat!


Beignet Ingredients:


  • 3/4 cup Apple cider

  • 1/2 cup lukewarm water

  • 1/4 cup granulated sugar

  • 3/4 a package of dry instant yeast

  • 1 large egg

  • 1 teaspoon of salt

  • 1/2 evaporated milk

  • 2 tablespoons melted butter

  • 1 tablespoon apple pie spice

  • 3 1/2 cups bread flour (plus s little more for rolling and kneading)

  • 3 quarts canola oil

  • Non stick cooking spray

  • Powder sugar for dusting


Directions:

  1. In a small bowl, mix together lukewarm water, sugar, and yeast. Let it sit for 10 minutes.

  2. In a large bowl, mix apple cider, egg, salt, evaporated milk, apple pie spice, and butter.

  3. After the yeast mixture has set for 10 minutes and is foamy, add to the big bowl with the apple cider mixture. Stir to combine.

  4. Add half of the flour and stir with a wooden spoon. (Tip: spray wooden spoon with non stick spray). After combined, add the other half of flour and stir to combine.

  5. Dust a clean flat surface with flour and roll the dough out onto the flour. Put a little flour on you hands and need the dough for 10 minutes until smooth.

  6. Place dough in a clean bowl sprayed with non stick spray. Cover with plastic wrap and let it set for 2 hours until the dough is doubled in size.

  7. Roll out dough on a flour dusted surface. Dough should roll out to be about a 1/2 inch thick. Cut into desired shape. I did squares.

  8. In a large pot, bring oil to 350 degrees Fahrenheit. Using a slotted spoon, place 2 to 3 beignet squares at a time. Once they float and are golden, flip and fry the other side. About 1 minute per side.

  9. Place on a wire baking wrack and dust with powder sugar.


Carmel ingredients:

  • 3/4 cup Apple cider

  • 3/4 cup butter

  • 3/4 cup brown sugar

  • 1/2 cup evaporated milk

  • A good pinch of sea salt


Directions:

  1. In a large skillet on medium, add apple cider, butter, and brown sugar. Cook for about 5 minutes until a deep golden brown. Stir ever so often so sugar does not burn.

  2. Add evaporated milk while whisking. Add a good pinch of sea salt and to be from heat. Enjoy
