Crockpot Hatch Chile Dip

This creamy dip was a crowd favorite at the hatch Chile fiesta! Time to bring out the crockpots!


My beautiful Hatch Chiles are from the one and only @hatchgreenchile (website: hatch-green-chile.com )! Talk about outstanding customer service! I can not recommend this family owned farm enough!


Ingredients: 

  • 16 ounces of cream cheese 

  • 1 cup of sour cream

  • 1 pound of ground Italian sausage (I used medium)

  • 6 Hatch Chiles, charred and skin and seeds removed 

  • 1 pack of frozen corn

  • 2 tablespoons Hatch Chile powder (from @hatchgreenchile ) or regular chili powder 

  • 8 ounces of Mexican blend cheese


Directions: 

  1. Brown the sausage in a pan. While sausage is browning, set the crockpot on high. 

  2. Dice up the Hatch Chiles

  3. Add the cream cheese, sour cream, sausage, corn, Hatch Chiles, Hatch Chile Powder, and 1/2 of the cheese. Stir to combine. 

  4. Let dip go for one hour on high in the crock pot. Then add the rest of the cheese to the top, replace the lid, and turn the crockpot to low for another hour or until dip is bubbly warm..

How much chopped green chili will 6 chilies make? I just have the Hatch chopped variety in my freezer, not whole or fresh ones, at this time. Thanks so much for your help.
