French Apple Cake

Such a lovely introduction into fall


Ingredients:

  • 1 1/2 sticks unsalted butter

  • 1 3/4 cups sugar

  • 1/3 cup heavy whipping cream

  • 3/4 teaspoon ground cinnamon

  • 2 large apples (your choice), cored, and cut into 16ths 

  • 1 cup all purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 large egg yolks

  • 3 large eggs

  • 4 ounces of apple sauce


Directions:


  1. Preheat oven to 350°F. Butter 9-inch-diameter cake pan with 2-inch-high sides. 

  2. Melt 1/2 cup butter in heavy large skillet over medium heat. Stir in 3/4 cup sugar, cream and cinnamon and bring to boil. Reduce and cook for about 15 minutes until Carmel consistency. 

  3. Add Carmel to the bottom of the pan and then add apples in a decorative pattern. 

  4. Sift flour, baking powder and salt into small bowl. Whisk on medium the 1 cup sugar, egg yolks, eggs, and apple sauce in a large bowl. Gently stir in dry ingredients slowly on low. Fold in 1 stick melted butter. Pour batter over apples in pan. 

  5. Bake until toothpick inserted into center of cake comes out clean, about 40 minutes. Cool cake in pan 5 minutes. Run small sharp knife around side of pan to loosen cake. Turn cake out onto platter. Serve warm or at room temperature
