Hatch Chile Mom Tacos
Ingredients:
2 pounds of ground beef
3 charred Hatch Chiles with skin and seeds removed
1 packet of taco seasoning
1 tablespoon of Hatch Chile powder
Directions:
In a large frying pan, brown ground beef. If needed, drain excess fat leaving 3 tablespoons of fat to remain.
Add taco seasoning and Hatch Chile powder. Stir to combine and simmer for about 3 minutes. Of ground beef becomes dry, add 1 tablespoon of water.
Add Hatch Chiles and allow to simmer for about 2 minutes.
Shredded Hatch Chicken Tacos
Ingredients:
6 chicken thighs, bone in and skin removed
3 Hatch Chiles, charred with skin and seeds removed
1/4 cup Hatch Chile Salsa
Salt and pepper
Directions:
In an instapot, add chicken and cover in water until chicken is just covered. Set insta pot on chicken mode or once it reaches pressure, allow to cook for 30 minutes. Release pressure and allow to vent for 15 minutes.
Remove chicken and shred it making sure to remove all bones. Add in salsa, Chile powder and salt and pepper to taste.
