Hatch Stuffed Chiles

My beautiful Hatch Chiles are from the one and only @hatchgreenchile (website: hatch-green-chile.com )! Talk about outstanding customer service! I can not recommend this family owned farm enough!


Ingredients: 

  • 10 charred, skinned, and seeded Hatch Chiles 

  • 1 pound of hot Italian sausage 

  • 8 ounces of cream cheese 

  • 4 ounces of sharp white cheddar cheese

  • 2 tablespoons of Hatch Chile powder

  • Salt and pepper


Directions: 

  • Preheat oven to 400 degrees Fahrenheit. Slice a line through the Hatch Chile to create a pocket for the filling to go. Brown the sausage in a large pan until crispy and golden.

  • Turn off heat and add cream cheese, cheese, Hatch Chile powder, and salt and pepper to taste. Stir to combine. 

  • Stuff the Chiles with the mixture and place on a baking sheet. Bake in the oven for about 15 minutes until the cheese is bubbly and gooey.
