My beautiful Hatch Chiles are from the one and only @hatchgreenchile (website: hatch-green-chile.com )! Talk about outstanding customer service! I can not recommend this family owned farm enough!
Ingredients:
10 charred, skinned, and seeded Hatch Chiles
1 pound of hot Italian sausage
8 ounces of cream cheese
4 ounces of sharp white cheddar cheese
2 tablespoons of Hatch Chile powder
Salt and pepper
Directions:
Preheat oven to 400 degrees Fahrenheit. Slice a line through the Hatch Chile to create a pocket for the filling to go. Brown the sausage in a large pan until crispy and golden.
Turn off heat and add cream cheese, cheese, Hatch Chile powder, and salt and pepper to taste. Stir to combine.
Stuff the Chiles with the mixture and place on a baking sheet. Bake in the oven for about 15 minutes until the cheese is bubbly and gooey.
