This delightful and slightly spicy casserole is the perfect recipe to warm you up on a crisp fall evening!
My beautiful Hatch Chiles are from the one and only @hatchgreenchile (website: hatch-green-chile.com )! Talk about outstanding customer service! I can not recommend this family owned farm enough!
Ingredients:
Bag of your favorite tortilla chips
10 charred and skinned Hatch Chiles with seeds removed
8 ounces of cream cheese
6 ounces of Mexican blend cheese
2 tablespoons of Hatch Chile powder
Sour cream and hatch salsa for serving
Directions:
Pre heat oven to 350 degrees Fahrenheit. Add a layer of tortilla chips to the bottom of your casserole dish. Then sprinkle with half of the cheese.
Lay the Hatch Chiles in a layer above the cheese. Add a layer of cream cheese. Add the rest of the cheese. Finish with crushed up tortilla chips on top. Sprinkle with Hatch Chile powder.
Bake for 30 minutes until the cheese is bubbly and the chips are golden. Finish with sour cream and salsa.
