I put a spell on you Tomato Soup

This creamy and decadent soup is delicious enough to put a spell on anyone! It has a little spice just like the Sanderson Sisters who inspired it!


Ingredients: 

  • 2 x 28 ounce cans of diced tomatoes ( #sanmarzanotomatoes are my favorite) 

  • 2 1/2 cups whole milk or cream 

  • 4 ounces of tomato paste 

  • 4 tablespoons of butter 

  • 1/4 cup flour 

  • 2 cloves of garlic minced

  • 2 tablespoons of Calabrian Chiles in oil (less of you don’t like spice) 

  • 2 tablespoons of herbs de Provence 

  • Salt and pepper to taste 


Directions: 


  1. Add butter to a large soup pot on medium. Once butter is melted, add garlic, herbs, and Calabrian Chiles. Allow to cook until garlic is just fragrant, about 30 seconds to 1 minute.

  2. Add flour while mixing with a wooden spoon. Allow to cook for 2 to 3 minutes while stirring frequently until rue is golden brown. Whisk in milk. Cook for another 2 to 3 minutes while stirring. 

  3. Add in diced tomatoes and tomato paste. Stir to combine. Add a good pinch of salt and pepper. Once soup begins to simmer, reduce the heat to low. Cook for about 20 minutes while stirring every few minutes or so. Make sure to stir the bottom of the pot so the soup does not burn. 

  4. Taste soup and add more salt and pepper to taste. Serve with fresh cracked pepper on top. (If you like your soup to not have any chunks, then put it in a blender or use an immersion blender. My hubby and I like it chunky )
