The most yummy and flavorful pot roast! Set it in a crock pot and forget it! Perfect for a night when you don’t feel like cooking.
Ingredients:
4-5 pound chuck roast with lots of fat marbling (if not much fat, add some butter into the crock pot)
3-4 cups of low sodium beef broth
Dijon or honey mustard
8 ounces of baby carrots
4 celery stocks- chopped into 2 inch pieces
1 large white onion- cut into 1/8s
6-8 whole cloves of garlic
1 teaspoon dried rosemary
1 tablespoon Worcestershire sauce
Salt and pepper
Directions:
Coat the roast completely in mustard and then put at the bottom of the crock pot.
Add veggies, seasoning, Worcestershire sauce, and garlic. Pour in beef stock until it almost fully cover roast and veggies.
Cover and cook on high for 4 hours or low for 7-8 hours.
This can be served over cauliflower mash!
