Make Ahead Crockpot Mash Potatoes

These scrumptious and cloud like potatoes are the perfect side for your Thanksgiving feast!

Ingredients:

  • 2 pounds of Idaho potatoes- washed, peeled, and cut into 1 inch rounds

  • 8 ounce package of cream cheese

  • 1 1/2 sticks of butter

  • 1 cup of heavy whipping cream

  • 1 tablespoon of garlic powder

  • 4 ounces of thick cut cheese of your choice

  • Salt and Pepper to taste

Directions:

  1. In a large pot, boil 4 quarts of salted water.

  2. Add potatoes and cook until tender (about 20 minutes)

  3. Drain potatoes and add to a stand mixer with the whisk attachment. If you do not have a stand mixer, add to a large bowl and either use a hand electric mixer or a potato smasher.

  4. Add 1 stick of room temperature butter, cream cheese, cream, and garlic powder. Mix on low for about 2 minutes.

  5. Use a spoon to push down any of the large potato chunks and turn the speed slowly up until the mixer is at its fastest speed. Whisk at this speed until mashed potatoes are whipped and fluffy like a cloud (about 2-4 minutes)

  6. Add salt and pepper to taste.

  7. Move potatoes over to the crockpot container. Cover with cheese and the remaining butter. Make this the night before, and cover and put in fridge overnight.

  8. In the morning, put the crockpot on low for 4 hours.
