Mummy Stuffed Hatch Chiles

These frightful mummies are stuffed with taco meat, hatch Chile salsa, and cheese! Perfect to make with the kiddos!

Ingredients:
5 Hatch Chiles- stem cut off, seeds removed, and one side cut open
1 pound of ground beef (I used 93/7)
2 tablespoons of Hatch Chiles salsa
1/2 a packet of taco seasoning mix
2 teaspoons of hatch chili powder
Shredded cheddar cheese
Package of crescent rolls
Black olives for eyes
Directions:
Pre-heat your oven to 350 degrees Fahrenheit.
In a skillet, brown ground beef. Once beef is brown, add in taco seasoning and hatch chile powder. Add a tablespoon of water if the mixture becomes dry. Cook for about 2 minutes. Add in salsa.
Lay Hatch Chiles out on a baking sheet. Fill with taco mix and then sprinkle cheese on top. Wrap in crescent roll dough so that it looks similar to a mummy. Cut black olives to look similar to eyes and mouth. Place on mummy.
Bake for 15-18 minutes until crescent dough is a slight golden color.
