Ingredients:

  • 5 Hatch Chiles- stem cut off, seeds removed, and one side cut open

  • 1 pound of ground beef (I used 93/7)

  • 2 tablespoons of Hatch Chiles salsa

  • 1/2 a packet of taco seasoning mix

  • 2 teaspoons of hatch chili powder

  • Shredded cheddar cheese

  • Package of crescent rolls

  • Black olives for eyes

Directions:

  1. Pre-heat your oven to 350 degrees Fahrenheit.

  2. In a skillet, brown ground beef. Once beef is brown, add in taco seasoning and hatch chile powder. Add a tablespoon of water if the mixture becomes dry. Cook for about 2 minutes. Add in salsa.

  3. Lay Hatch Chiles out on a baking sheet. Fill with taco mix and then sprinkle cheese on top. Wrap in crescent roll dough so that it looks similar to a mummy. Cut black olives to look similar to eyes and mouth. Place on mummy.

  4. Bake for 15-18 minutes until crescent dough is a slight golden color.
