This pasta salad is inspired by my favorite mouse... Minnie
Ingredients:
8 ounces of farfalle pasta
1 cup of cherry tomatoes
1 cup mozzarella pearls
1 cup of black pitted olives
1/2 cup olive oil
1/4 cup champagne vinegar
1 lemon
3 cloves garlic
Handful of chopped mint
Salt and pepper
Directions:
In a glass or a jar, mix the olive oil, vinegar, zest and juice of the lemon, garlic, and salt and pepper to taste.
In 4 quarts of salted water, boil pasta for 8-10 minutes until al dente. Drain and add pasta to a bowl.
Add tomatoes, mozzarella, black olives, and 1/2 of the dressing to the pasta salad (save the other half to marinade chicken in next recipe). Toss and finish with mint.
