Polka Dot Pasta Salad

This pasta salad is inspired by my favorite mouse... Minnie


Ingredients: 

  • 8 ounces of farfalle pasta 

  • 1 cup of cherry tomatoes 

  • 1 cup mozzarella pearls 

  • 1 cup of black pitted olives 

  • 1/2 cup olive oil 

  • 1/4 cup champagne vinegar 

  • 1 lemon

  • 3 cloves garlic

  • Handful of chopped mint 

  • Salt and pepper


Directions: 

  1. In a glass or a jar, mix the olive oil, vinegar, zest and juice of the lemon, garlic, and salt and pepper to taste. 

  2. In 4 quarts of salted water, boil pasta for 8-10 minutes until al dente. Drain and add pasta to a bowl. 

  3. Add tomatoes, mozzarella, black olives, and 1/2 of the dressing to the pasta salad (save the other half to marinade chicken in next recipe). Toss and finish with mint.
