Pumpkin Chocolate Chip Keto Bars

Holy keto yummines! These gluten free bars are too good! I couldn’t wait to take a bite!

Ingredients:

  • 1 cup unsalted butter softened

  • 10 drops of monk fruit or stevia sweetener drops (more can be added to taste)

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1 1/4 cup pumpkin puree

  • 1 cup almond flour

  • 1 cup coconut flour

  • 1 tablespoon baking soda

  • A pinch of salt

  • 1 tablespoon pumpkin pie spice

  • ½ teaspoon nutmeg

  • 1 cup of sugar free or dark chocolate with low sugar chocolate chips


Directions:


  1. Preheat oven to 350 degrees and grease or line 9×13 baking pan.

  2. In large mixing bowl, cream the butter. Then add the sweetener and best for about 1 minute. Then beat in egg and vanilla. Add the pumpkin and mix well.

  3. Add the baking soda, almond flour, coconut flour, and spices. Mix to combine. Add in chocolate chips leaving about 1/4 out so you can put those on top.

  4. Spread batter into prepared pan. Sprinkle the rest of chips on top.

  5. Bake for 30-35 minutes. Let cool before cutting. The hardest part is always waiting for it to cool!
