Smoked Chicken Thighs

One of my favorite foods from Disneyland is smoked turkey legs. This recipe is inspired by that and might, dare I say it, almost as good! 


Ingredients: 

  • 1/2 of marinade reserve from polka dot pasta salad (the perfect side dish for this) 

  • 4 skin on and bone in chicken thighs 


Directions: 

  1. Marinade chicken in reserve for 30-40 minutes while your smoker heats up to 400 degrees Fahrenheit. If you do not have a smoker, you can grill the chicken, grill the chicken with a smoke box, or you can bake in the oven at 400 degrees Fahrenheit. 

  2. Remove chicken from marinade and place skin side up in the smoker. Cook for about 30 minutes or until the internal temperature is at 155 degrees Fahrenheit. Remove the chicken and allow it to rest and come to temperature at 160 degrees Fahrenheit.
