Lavender Lemonade Mimosas

When life hands me lemons, I grab some lavender and make this delightful drink!


Ingredients

  • 3 tablespoons of crushed lavender (mine is from @redbirchfarm)

  • 2 tablespoons of honey

  • 1 cup of water

  • 2 large lemons

  • 1 sliced cucumber for garnish

  • A bottle of Prosecco, Champagne, or sparkling Moscato

Directions


1. Zest 1 lemon and sprinkle the zest into an ice cube tray.

2. Slice the lemon in half. Using 1/2 of the lemon- slice it into small wedges and put 1-2 pieces of lemon in each cube of the ice tray.

3. Spread 1 tablespoon of lavender amongst the cubes of the ice tray. 

4. Put in freezer for at least 4 hours (best to do the night before)

5. Make a simple syrup by adding water, juice from 1/2 lemon zested earlier, the remaining lavender, and honey to a small sauce pan.

6. Set the temperature setting to medium and bring to a slight boil.

7. Once boiling, reduce heat to low for about 5 minutes. Stir every so often to ensure the honey does not burn.

8. Cool and strain syrup into a pitcher.

9. Zest the other lemon into a pitcher.

10. Add the juice of the lemon and then slice and add it to the pitcher. Add cucumber to the pitcher.

11. Pour in alcohol of choice.

12. Taste test! I like my lemonade tart. If you want it to be sweeter, add more honey directly in and stir to combine.

13. Add ice cubes to glasses and pour this delicious bubbly lemonade on top!
